Un-smoked dry cured ham shank produced from the herd of free range rare breed Tamworth pigs we raise on our farm who live outdoors and root in the earth, eating pasture, grass and foliage 

This is the shank end of ham leg including bone. Poach this slowly to produce a rich, nutritious ham stock - use this for pea soup, lentil soup, vegetable soups and all ham and bacon based casseroles such as cassoulet.
