Delicious free range Tamworth pork chops on the bone, suitable for slow oven braising, or barbecue. These chops are not trimmed and have the skin on so have crackling. 

This product is butchered and frozen as soon as it arrives from the abattoir which makes it a more suitable pork product for histamine intolerance. The chops are packed and frozen in individual packs. To minimise histamine development It should be kept frozen, thawed quickly and cooked immediately after thawing.  It should be cooked quickly e.g. pan fried or roasted or best pressure cooked to minimise the time for histamine development during cooking. When cooked it should be eaten immediately, or refrozen immediately as portions of cooked meat. 

These chops are from free range outdoor reared Tamworth rare breed pigs. As such they have a layer of fat of approximately 3/4 inch which outdoor reared pigs need under their skin to keep them warm through the winter when sleeping outside. If you don't want to eat the fat with the chops, just cook the chops as normal with the fat, then pour off the rendered fat from the roasting tray or grill pan.  Strain it to remove the meat remnants and then keep it in your fridge. It is pure lard and has many uses as a very pure cooking fat. It can be used in place of olive oil as it is high in omega 3 and is more stable when heated.  

Cooking Method

Sear in a hot pan with olive oil or lard on both sides to brown for a minute or so. Put the pan into a hot oven (190 degrees) for 10 minutes. Check temperature with a temperature probe. When the pork reaches 75 degrees internally the chops are ready. 

All our meat products may be fresh or frozen, and this varies for each product on a daily basis.  Whether a product is sent out fresh or frozen will depend on the stock situation on the date of shipment and on the shelf life of the individual  product. Mixed boxes may consist of both fresh and frozen items.  When we pack your order for collection or delivery fresh items are in a bag marked 'fresh items' and frozen items are in a bag marked 'frozen items' . In general our sausages and burgers will be frozen - we produce these in large batches and freeze on the day of manufacture so these items will normally be frozen unless we send them to you on the day we make them. 

(A very few products in our range are routinely stocked in both fresh and frozen options e.g. Free range chicken supremes chilled and Free range chicken supremes frozen, or whole chickens chilled and whole chickens frozen.)  

If you do not want an item as a frozen product please put it into your basket as usual but put a note in the 'NOTES TO VENDOR' box on the checkout - just say 'NO FROZEN PRODUCTS PLEASE'.  When we prepare your order we will leave out any items which are only in stock as frozen items on the day your order is shipped or collected and we will refund you for the items which we cannot supply as fresh items on that day.


Need to cook your frozen items quickly? Just pop the product in it's sealed vacuum pack in a bowl of tepid water. Small items such as single portions of steak, chicken portions, packs of sausages or burgers will defrost within 30 minutes or so and larger items such as chickens or roasts will take a couple of hours or so to defrost.  When defrosted remove the product from the bag and cook immediately - never store items which have been defrosted in this way in your fridge.  

All our minces, sausages, livers, steaks, chicken pieces, chickens, casserole cubes, stir-fry strips and bacon are now packed in plastic-free, home compostable biodegradable and ocean friendly vacuum pack bags. (Larger roasts and hams are still packed in recyclable vacuum pack bags until we use up packaging stocks).

You can collect pre-orders at the weekends at our farm. . Collection days at our farm are Fridays 2 pm to 6pm & Saturdays 2 pm - 6pm. We will butcher your order individually  so our butchers we need 24 hours to prepare and pack your order. Our butchers work Monday to Friday 9 am to 5 pm so if you want to collect your order on Friday please order by 12 noon Thursday and if you wish to collect your order on Saturday please order by 12 noon Friday to give them time to cut your meat to your requirements. Orders for collection will be prepared for collection on the Friday of the same week, unless you request a different date by adding a note to your order at the Shopping Basket page. 

Courier Delivery service to Northern Ireland, Ireland and Great Britain

Orders for Parcelforce delivery will be shipped on the next available shipping date, unless you instruct us otherwise with a note on your order. Shipping days for NI and GB are Monday to Thursday for delivery by Parcelforce on Tuesday to Friday. Shipping days for ROI are Monday to Wednesday for delivery by GLS on Tuesday to Thursday. If an order contains items which are not available we will ship the order on the next available shipping date when the items are available e.g. if an order contains chicken products which are only received by us on Thursday afternoon or Friday we will delay shipment until the next available shipping date which will be Monday of the next week. .

We offer a local delivery service each weekend (normally on Saturday) with our own vehicles and drivers.  We cover Belfast, Holywood, Bangor, Newtownards, N Down, Donaghadee, Dundonald, Comber, Killinchy, Lisburn, Hillsborough, Moira, Newtownabbey, Glengormley postcodes.  Our butchers work until 5 pm on Friday, and don't work over the weekend, so if you need an order delivered on Saturday please order by 12 noon on Friday to give them time to prepare the order for you.

Click and Collect - Collecting your order in person at the Farm

If you wish to collect your order in person you can you collect at the farm on Friday 2pm to 6pm and Saturday 2pm to 6pm. There is NO minimum order value for orders collected in person and NO charge for collection.

    Here is a general guide  - based on average portions.

    Turkey - allow approximately 1.5 lbs (675 g per person). For turkeys under 14 lb allow approximately 2 lb (900 g) per portion as the bone to meat ratio is higher for smaller birds.

    Goose - allow 2 lbs (900 g) per portion. The biggest geese are only about 11-12 lbs (approx 5.5 kg) so if you need to feed more than 6 people you will need 2 geese.

    Chicken (whole, on the bone) - allow 1 lb (450 g) per portion.

    Duck - allow 1 lb (450 g) portion.

    Pheasant - 1 pheasant feeds 2 people.

    Guinea Fowl - 1 guinea fowl feeds 4 people.

    Ham, raw. Order 8 oz (225 g) per portion. This will give you 4 oz (110 g) of cooked ham per portion. Ham loses approximately 1/3 to 1/2 its weight in the boiling process, so if you need 2 kg of cooked meat, you should order 4 kg of raw ham.

    Meat on the bone (e.g. Rib Roast) - allow 1 lb (450 g) per portion.

    Meat, boned (e.g. Rump roast/Topside Roast/Boned Pork Loin) - allow 8 ounces (225 g) per portion.

    Meat boned for casserole (e.g. venison casserole pieces) allow 4 oz (110 g) for a casserole with equal vegetable ingredients e.g. mushrooms, onions, carrots. If the casserole meat is just poached in wine, allow 8 oz (225 g) per portion.

    Please note your goods may vary slightly from the pictures on the website. . The images of the meat on our website are for illustrative purposes only. As meat is a natural product, each carcase we butcher is individual and even within the same breed carcases vary in size, overall weight, levels of fat cover, colour and marbling etc.  The product you receive may not look exactly like the image of the product on the website, as individual meat qualities e.g.level of subcutaneous fat, colour of muscle vary from animal to animal.

    Although complete carcases vary in size the butcher will cut the meat cut as closely as he can to match the weight of the meat product sold. This means that, for example, a rib eye steak of 200 g  may vary in dimensions when cut from one beef carcase compared to that cut from another. The steaks from a smaller beast will be smaller but thicker, and those of a larger beast will be wider but thinner, but in both cases the steaks will weigh 200 g approximately, As our meat is cut by hand it may vary slightly in shape and appearance from batch to batch. The product packaging of our goods may vary from that shown on images on our website.

    We cut  meat as accurately as possible, but as this is a natural product the weight of the product supplied may vary slightly from the weight ordered. It is impossible for the butcher to be absolutely precise when cutting meat and poultry weights and weights of poultry portions (e.g. chicken breasts) vary slightly from week to week depending on the exact age of the birds when killed.  Customers who have paid in advance online will not have to pay more if they are delivered or collect a heavier product than than purchased, but we will not make a refund if a product is less than 10% lighter than that prepaid online

    Your order may contain both fresh and frozen items.  

    Frozen items

    Frozen items are marked with a ‚ÄėBest Before‚Äô date of 365 days from the date of packing. Please ensure you put frozen items in your freezer immediately your package is delivered, and store them frozen until you are ready to cook them. Once thawed or defrosted previously frozen items have a ‚ÄėUse By‚Äô date of 12 hours and must be cooked within 12 hours. Do not leave previously frozen items in a¬†refrigerator for several days after thawing ‚Äď they will not be safe to eat and should be discarded.¬†Previously frozen items can be cooked and then refrozen for example, frozen mince can be defrosted, cooked and then frozen as e.g. Shepherds‚Äô Pie or Bolognese Sauce.

    Chilled items
    Chilled items are marked with a ‚ÄėUse By‚Äô date of several days (the length of which varies depending on the type of product ‚Äď minced items with no preservative have a 2 day shelf life, fresh chicken has a 3 day shelf life, sausages or burgers containing preservatives have a 5 day shelf life in an unopened vacuum pack, beef steaks have a 14 day shelf life in an unopened vacuum pack, bacon has a 14 day shelf life in an unopened vacuum pack, but 4 days shelf life only once the pack is open).¬† Fresh meat and poultry should be stored in a refrigerator set to the lowest setting (2 degrees Centigrade) and should be cooked before the ‚ÄėUse By‚Äô date on the pack. Once cooked fresh items can be frozen and stored in a freezer.¬† All fresh items can also be frozen at home if they are put in your freezer immediately your package is delivered.
