Skirt steak has an intensely beefy flavour. Skirt is an ideal steak for marinating and is the ideal cut for fajitas. The best way to cook it is very quickly over a very hot grill as you do not want to overcook skirt steak. Cooking it fast on a BBQ browns the surface of the meat quickly, without cooking the inside of the meat for too long. It should be cooked medium-rare to medium. When cooked it should be sliced thinly against the grain.

For courier shipping of frozen food we offer a subsidised extra insulating polystyrene box, lined with wool and filled with special ice packs for frozen food which will keep meat frozen for 48 hours.
