Pancetta is made by curing the belly of our wild boar x Tamworth pigs, in a dry cure with mixed with Black pepper, juniper, bay, garlic, thyme, oregano, and rosemary. It is cured for 3 weeks, then sliced very thinly. It is delicious, and can be used in a variety of dishes and pastas to add depth and flavour.
Turkeys, geese, chickens and ducks for Christmas are all killed in mid December and we won't know the final weight of the whole batch of birds until they are killed. As these free range birds are reared outdoors in the open air the final weight they reach depends on the weather in November and December - a spell of cold or wet weather means they do not reach their optimum weight. The weight of all these free range birds can vary up to 1kg both lighter and heavier. We arrange all the birds in size order and allocate them to customers fairly so everyone gets as near the weight requested as possible but we cannot guarantee an exact weight - we will give you as near as we can from the birds we have available. Customers who have paid in advance will not have to pay more if they collect a heavier bird but we will not make a refund if a bird is up to 500g lighter than pre-ordered
We cut meat as accurately as possible, but weight of the product supplied may vary slightly from the weight ordered - it is impossible for the butcher to be absolutely precise when cutting meat to size. Customers who have paid in advance online will not have to pay more if they are delivered or collect a heavier meat product than than purchased, but we will not make a refund if a product is less than 10% lighter than that pre-paid online
Customers who opt to pay on collection at the Farm Shop or at St George's Market Belfast will be charged the exact price for the item supplied as shown on the scale when they collect.

COLLECTING CHRISTMAS ORDERS IN PERSON AT KILLYLEAGH FARM SHOP
Christmas meat orders (beef, pork, lamb, venison) and game Birds (pheasants, quail, partridges, guinea fowl) can be collected from Friday 21st December onwards.
Christmas hams will be ready for collection from Saturday 22nd December onwards.
Fresh Christmas turkeys, geese, chickens and ducks are only available for collection from the farm shop on Sunday 23rd December and Monday 24th December 9am to 5pm.

The last market we will be attending before Christmas will be Saturday 15th December. We will not be at St George's market on Saturday 22nd December. We will be at St Georges market on Saturday 29th December for collection of New Year's orders.
