This steak is cut across the haunch (leg) of venison from which the bone has been removed. It is a slice of a boned haunch leg of venison. The whole leg has been cut by the butcher to remove the thigh bone, so when sliced the steaks will not therefore be perfect round slices. If you are looking for even shaped steaks, you may prefer venison loin steaks, which are cut to produce even cylindrical (flat 'sausage shaped') steaks.
