Free range pork shoulder, boned, and rolled into a roasting joint. Excellent for slow roasting. The shoulder has more fat than the loin or the leg. It has a melting texture, and crispy crackling. In particular it is uniquely suitable for cooking in a very low oven, a technique resulting in supremely tender pork.
